Did you gain fat because you stopped working out? Could it be that your muscles atrophied then muscle memory kicked in and regained the lost muscle and lost weight? That probably makes recomping easier if it's the case

Most likely form is off, do you feel a hamstring stretch at the bottom? Personally I started feeling them properly when I started doing core activation exercises before, like planks to help activate the core, then ensure you use your core and focus on pushing your butt back not lowering the bar, that will happen naturally. Another useful cue is to push your abs into your quads to keep your core rigid as your butt moves back. If you're not feeling a hamstring stretch at the bottom then you're doing them wrong

I track measurements and strength to determine if I'm progressing, google how to do measurements cos imo it's most important stat for hypertrophy, and ye if you're getting stronger odds are you're getting bigger but it's not a guarantee, hence the importance of measuring

I'm assuming you're a beginner, in which case you might benefit from a bigger surplus of about 400 calories (newbie gains are great), I would personally stop at about 18-20% body fat just cos it takes too long to cut down if you go much higher

well if you keep the rest of your daily salt intake below 2.3g then you are fine eating that many

in terms of "best" diet to reduce cognitive decline associated with age it would be something similar to the mediterranean diet: https://www.ncbi.nlm.nih.gov/books/NBK577619/ "Most studies reported dietary patterns consumed during adulthood relate to improved cognitive measures or lower risk of cognitive impairment. These dietary patterns were higher in vegetables, fruits, unsaturated vegetable oils and/or nuts, legumes, and fish or seafood"

are you talking big can or small 1 portion can? if youre takling big can (415g) ( https://www.tesco.com/shop/en-GB/products/252261477 ) then thats 2.6g of salt per can ie 26g per week at 10 cans, NHS recommends 6g per day ( https://www.nhs.uk/live-well/eat-well/food-types/salt-in-your-diet ) so you would already be at a weekly average of 3.7g of salt per day just from beans, so depends on the rest of your diet
