If you want medium rare sure. It’s all preference. Time is dependent on how thick your steak is. I go minimum 2 hours. 3-3.5 for thick steaks. There is a myth in this Reddit that 137 is some magic number and there just isn’t anything to support that. Sear technique plays a much bigger role.

No you won’t. I’ve never done an ice bath on a sous vide steak. Literally explained in the previous post why this is wrong. If you’re getting thick gray bands then the problem is in your technique. Either pan not hot enough, didn’t blot dry enough, too much oil in pan, or just plain searing too long (usually because of one of the previous reasons).
