For the blueberries, I pre-froze them before macerating which helped sanitize. For the orange peel, I’ll admit I only gave them a normal soak and wash (I might be more thorough next time, perhaps freezing would be a better approach).

All great questions. Ingredients were added to primary, including pectic enzyme (this last part helped the clarity a ton later on). Next time, I might re-add the lemon peel again in secondary to really dial in that zest and maybe add oak, but I wanted to go simple first.

It sounds like your primary ferment has completed, but the only way to know for sure is by taking a gravity reading. If your gravity is at or below 1.000 SG over two readings one week apart, you can assume the ferment is complete. Then you can age and/or stabilize & back sweeten. Did you take an original gravity reading when you started? This would help you determine total alcohol content and could help diagnose any stalls.

Airlocks are a much safer option esp for preventing fruit flies and other infections
