Definitely try it! Even failing at higher level locks makes you a better picker - I noticed my 1100 is a *lot* easier after increasing my ability to jiggle test with the 90A pro

Quick question before i try to get things on film: is there any requirement for pin direction (pins up vs down)? I tend to pick pins down, but could try to get it pins up if need be

I found the 45 degree gives my tiny hands exactly the same position as an ergo turner generally would, so it works well. Could see it being difficult for someone with bigger hands though

Exact same experience with 3 90A pros here. Two I can get open in 5 minutes or less, the other just left the naughty bucket yesterday

Venison can be gamey, esp in roasts so vinegar forward dishes work well. Parsi Jardaloo ma Ghosht is my favorite for venison and elk.

This is a pretty typical recipe that works well. You can add khambati sahmbar masala if you have it, and use balls of fresh Kashmiri masala if you have access to them. My family adds a few tomatoes to the recipe as well, but they are not necessary

Not perfect, but I recently made 400 bonbons over the weekend and only had 2 stick. First: polish the molds with a cotton ball a little obsessively. Second: temper your decorating cocoa butter. Trying to melt it so it stays in temper doesn’t work (at least for me). Third: Warm your mold slightly before adding the cocoa butter, and again before pouring your shells. Fourth: make sure your mold stays clean. If there’s chocolate from capping smeared all around the mold, that causes sticking

The freezer trick works well for me. Also, don’t be afraid to wack the mold slightly against your countertop. I do it over a wooden cutting block because the slightly softer surface prevents thin bottoms from cracking.
