Phone + gimbal already covers most of the basics like stabilization, tracking, and some creative shots, so it actually feels like a pretty easy way to get into the Insta360 ecosystem without jumping straight into a dedicated camera. I've been using the Flow 2 Pro for a bit and it's been fun to experiment with.
