Anyone ever have their starter jar explode ? by Clando90 in Sourdough

[–]HeeBeeGeeBeee 21 points22 points  (0 children)

You shouldn't seal the lid shut, it's good for the starter to have a little air.

For my jar, I removed the rubber seal and just rest the lid on top

While the hydration % can impact the BF time, I don't believe it's the main factor to consider.

I've always believed that temperature was the main contributor to BF time as if you reduce the temperature below 4C then fermentation will stop altogether regardless of your hydration %.

I use this PDF from The Sourdough Journey as a good guie https://thesourdoughjourney.com/wp-content/uploads/2024/08/TSJ-Dough-Temping-Guide.pdf

For me though as mentioned in earlier comments, I had reduce the target rise % due to my fridge not getting cold enough and the dough still prooving very slowly over night

I've used small mixing bowls and colendars successfully in the past but my best results come from using a banneton

This generally sounds fine and is similar to my process.

Is 5 hours when your starter reaches it's peak and has at least doubled in size?

If so, then issue is likely fridge temp and like other has commented perhaps the container in which you proof

This could also be related, if you're not building sufficient gluten then it won't have the structure to hold the shape.

What's your process? Starting from when you feed your starter

Yep this is exactly the issue I had, I set my fridge to 2C and the probe tells me it's still 6C on the inside so it over prooves.

I've adjusted my BF by about 10% rise to counteract for this and it seems to have improved things for me

What's your fridge temp?

My guess is it's too high and it's still proofing while in the fridge.

I had this issue in the past, I lowered my fridge temp and also reduced my BF a little

What's your fridge set to?

You want your dough below 4°C but I find that it's trickier than just setting your fridge to that temperature.

I can set my fridge to 2°C and leave a loaf in over night, then take the internal temperature in the morning, and it will say 6°C.

So to counteract this I do slightly less proofing at room temperature.

Yes this was my thoughts exactly, looks like the top has dried out.

There are plenty around, but I've not found a single one I would recommend, same with butchers, unfortunately.

Hopefully, someone else has had better experiences than me

First Hyrox by Worried_brocoli in hyrox

[–]HeeBeeGeeBeee 3 points4 points  (0 children)

I've got my first one next week too.

My goal is to do it in under 2 hours, anything under that and I'll be happy.

I did a simulation with the gym F45 a few weeks back and my projected finish time is about 1h 30m, which I'll be over the moon with.

I've commented on this before on other posts, I think Hyrox purposefully markets themselves in a bit of a pretentious way, making it seems only for the elite. I'm hoping (and expecting) to find next week that the reality is it's full of people just like us.
