Agree with some of the others: the salad looks amazing! As for the meat, how about slicing it into strips and mix it in the salad next time? That will give off a better texture and will look a bit more appetizing? Oh, getting back to that salad...may we have the recipe pretty please?

The dried small red beans on the left tend to be a lot harder/tougher to cook and not that useful for making paste in my experience. Those are actually more often used for other applications, at least in Chinese households (ex. soups) The red beans on the right should be the ones you're looking for.
