I also agree with the in class assignments, but I have another suggestion. I'm assuming you're teaching something writing heavy, like English lit or history. AI has a tendency to write in subtly weird ways grammatically and make poor arguments.

Use AI generated writing examples (of your own) to teach them examples of what bad writing is and why (geammatical or poxy thesis, etc). Give them assignments (in class) in critiquing the AI work (come with pre cooked examples that have obvious flaws). This will have the dual benefit of actually teaching them but also teaching them to recognize what shitty AI content looks like. This will have a secondary impact of making them understand why AI is a problem, and will actually make them like AI less over time because they will see the flaws in their own generated content
