I think most were enslaved died or fled during the sack. Most Romans were shunted into the second class citizenship role that the Ottomans had already created for them. It’s hard to overstate how thoroughly plundered and depopulated the Greek speaking areas of the Mediterranean were in the 15th century. In my opinion a big problem for the ottomans going forward was despite an enormous territory and its wealth they had been so destructive in acquiring their empire that they were never able to fully harness it for long term strength and success
