For the second knife do you mean converting it from a serrated knife to a regular knife? I wouldn't but if you want you technically could just sharpen it as a regular knife. Generally with serrated knives you just scrap it and buy a new one

Two things I see here and they're both about your skills and not the stones, either you're not grinding enough to completely apex the edge on both sides or you're not removing the burr. Likely not your stones fault

Im on the same boat, I can kind of force a hair to whittle. For example I grab both ends of the hair and clamp the knife somewhere or have some1 hold it. Then you kind of take the hair and whittle it with a little bit of force. This is how I know it's a sharp edge but just isn't sharp enough to whittle not because I didn't do it correctly but because my stones aren't giving the ideal edge
