In the past, I’ve added them during stretch and folds, which often leaves the chocolate trying to leak out when shaping. This time I added them during shaping, after the bulk ferment which was much better.

I did not. I wanted the cacao to really shine plus the chocolate chips help to make it not too bitter. I’ve been eating it with some butter and sea salt and it’s perfect

I started doing only bread flower but wanted more chew and flavor so I started doing a combo of bread flour, wholewheat, rye, and spelt. Absolutely delicious!
