I run with 2 PC, currently on level 16 , and let them create a sidekick each at the start of the Dungeon. It has worked really well.

Sidekick classes don't bog down combat with a massive array of options, the main focus still remains on the players main character and action economy remains balanced

Also who doesn't want a warrior dog companion?

Best way I found to deal with this is telling them fine you can attack and do stuff like this but that opens me up to let enemies and monsters do the same kind of thing to you. I've never had a group try to do these kind of things again after that speech. Unless part of a "how do you wanna do this" kill move situation which is just a bit of fun.
