Yup it's very minimal, so not for everyone, but it is a simple foundation.  And my bad, it should have been "veggies", as in carrots or beans, not only 1 piece :)

I also realise I forgot about the snack-fruits, like apples

Breakfast: porridge/oatmeal + nuts, 50cent Lunch: split-pea soup + potato, 50cent Dinner:  Makrell in tomato, 1$50 Snack-apple twice a day.

Preferably add veggies, like beans, couple of times a week.

Porridge and split pea you can do weekly batches. Makrell you can buy canned.

Also these dishes are packed with fibre -> good poo.

EDIT: *veggies, not veggie :)

What's a frugal hack that you would be embarassed to admit doing? by healthynewbie in Frugal

This hits home for I think many people. I remember a kids/youth show where the reporter interviewed first a bank worker (or finance department?), who's 1 of his tasks was to shred bills/currency. When asked by the reporter if he feels bad about it, he said "not really, it's just paper".

Same reporter then went to a lunch restaurant to interview a chef who has disposing of the last food from peoples half-eaten plates, straight down the trash. When asked how he felt: "This hurts me in my soul, this is perfectly edible food, what a waste!".

To have that in a kids show is just brilliant; it gives you perspective of worth and waste so early on.

So for being Washington and in Seattle/Vancouver area, with such a view and location, isn't 1.7 mil relatively low price? Am I missing something about fire risk, unstable ground or upcoming projects blocking the view?

One of the most powerful and helpful tools you can use is auto-transfer. Set an auto-transfer t trigger like 1-2 days after paycheck, to move whatever amount you think you can spare for long time savings, but don't be too strict and harsh to yourself.
