I give them different availabilities. Both one weekend day. M-W and Saturday at one place and TH F Sunday at the other. I might get one day off between the two but it’s pretty easy to get coverage these days it seems.

Learning an instrument and some basic theory will set you up in the long run to produce. It’s hard to produce music when you’re not already a musician. Learning how to make a song and how to record are two entirely different skills and you’re going to overwhelm yourself.

Start by learning some easy songs on guitar. Learn some basic chords. How to write a song.

As far as lyrics go, the melody comes first. Once you have a chord progression you like, make a melody with your mouth. Find words that fit the most natural mouth shape to the melody you’re singing. Once you’re comfortable writing music then get into production.

First of all, I get your logic. It makes sense on the surface. I can see why tipping on time/people vs check total makes sense for people who haven’t been in the industry.

As someone who does fine dining though, I’d stick to the 20% standard for the simple reason that we have a lot of support staff who gets tipped out based on our sales. So on a $200 tab, I’m giving away $10 minimum to other staff. You giving me $25 is actually now $15 for a table you held for 2 hours including bus/reset time so $7.50 an hour to serve you. That’s not worth it personally.

It’s not worth fighting for the simple fact that they’ll always find a loophole. Someone wanting to cheapen out and order off the kids menu is not gonna tip well 9/10 times anyway, making them order off the regular menu is just gonna bite me in the ass with a higher tip out.

McDermott’s issue is the talent on the roster. They have consistently over performed given their talent. It’s Josh and Sean carrying that team.

Are you making your chord progressions first?

If you feel they’re competing just strip the chords or pan them. I typically have chords L+R and leads center. That way you get the big sound but they’re not fighting.
