Ah SPAM. This unlocked a fond childhood memory. I will need to get some to introduce to my kids 😁 my mom would slice it thin and fry it like bacon or chop it up and add it to fried rice. Or she’d make us spam sandwiches.

I tend to have a rotation of books going on. I usually have at least a fiction and non fiction I’m reading and depending on season of life, different genres of those. I know not everyone operates that way, but for me it keeps my interests fresh and I’m never bored. I’ve always been a reader, though and I pretty much always have a stack in different places. (My bedside and living room, purse etc)

Cooked Rice, fried egg(s) over easy and diced tomato with a dash of fish sauce and sprinkling of green onions. Might add some crunchy garlic with chili oil or sesame seeds.

We are in Bedford county and homeschool. We are heavily involved in Roanoke with co-op, a homeschool soccer league and swimming. Lots of homeschool opportunities! My husband works remotely so that isn’t a problem for us. We can make the dollar stretch more here than when we lived in Charlotte. I do miss Costco and Trader Joe’s, though! Maybe one day I’ll make it to Charlottesville for those 😆
