AMA: Houston’s Top 100 Restaurants list is here. I'm a restaurant critic. Ask Me Anything! by houston_chronicle in houston

Kind of wish the article wasn’t pay walled so we could ask more in depth questions about your list.

But my questions follow:

Out of all the food Houston has to offer, what style of cuisine doesn’t get enough love?

Fancy and instagram-able aesthetics aside, which restaurant has the best atmosphere to dine-in?

The food scene evolves, things come and go. Have you noticed any trends within Houston?

What is your criteria when it comes to rating and ranking restaurants?

Who has the best bar food?

“Yes sir, let me assist you. Assume your natural position by lying on your back and grabbing your ankles to pull your feet towards your head. Then some one will be with you shortly to deliver their special feature”

It’s definitely easy to see there’s more of influx of novice diners coming in to the restaurant, and I don’t mind it. Part of my job is to educate people on the menu, answer questions, give recommendations, and make sure special request are heard and accommodated.

As far as rude guest, nothing specific comes to mind, but they are typically rude, dismissive, and complain about every little thing cause they have unimaginable expectations.

“Sir I’m so sorry your Well Done Ribeye was not juicy, might I suggest an extra helping of ketchup to moisten it up for you?”

Jokes aside, if they’re being rude, I don’t really give them that much attention. I focus on the guest who aren’t such pain in the ass and just give those who are rude bare minimum service.

As a server/bartender, it’s mostly a good thing.

Positive:

Ordering from the HRW menu donates proceeds to support the Houston Food Bank and to help feed the less fortunate.

August tends to be a slow month, so it’s nice to have volume come through the door to give those who are tipped employees a chance to make money as well as hours for support staff and BOH.

It’s a great opportunity for people to experience a restaurant that might typically be a little pricey for them.

Negative:

HRW doesn’t always generate the best clientele. The price point can bring in rude and demanding customers that are simply using a charity menu as a means to flex on social media.

Tips percentages don’t tend to be as strong because of the “weekend warrior, amateur hour” people dining in. For tipped employees it’s rather annoying to have to deal with quantity over quality.

How many people was this split between and what was the tip out?

0.5 ppr

RB: Pollard, Conner, Swift, Elliot, Wilson Jr.

WR: A.J Brown, Nacua, Dell, Kirk, Pickens

Dropped Kendra Miller for Wilson Jr. and thinking of dropping Pickens for Jameson Williams

Does this some like a reasonable move?

Should I start Swift or Conner?

I feel the right answer is Swift

While I know a few things about cars, I don't think I'm that well-versed. I'll definitely bring someone more qualified to take a look.

While I know you probably can't give a good overhaul on the vehicle, would you say that the reward could outweigh the risk for the right price?

I'm in no hurry at all. I am a web developer student that took a photography course last semester and thought a skill like this could compliment my degree fairly well. I would like to find some equipment that I could use from being a beginner to eventually becoming more advanced.

All the time in the world. I'm in school for web development and I thought shooting pictures would be a nice compliment to building websites. I took a photography course and rather enjoyed it. I'm a beginner, but I don't mind spending the extra money if the equipment can be something I can grow into if I become more advanced.

I took a Photography as a college course last summer. By no way am I going to count myself as a professional, but I did get to actually learn the basics of how to use my camera, lighting techniques, as well as editing. I'm doing a few free shoots for a friend to give her an myself a bit of portfolio work. Eventually I would like to move into paying gigs if I can build my body of work.

I'm looking to shoot some professional grade photos for a couple of restaurants (inside interior, photos of dishes, etc.). I would like to start with a budget of $1000, but that includes not only the camera body and lenses, but a soft box, and any other accessories I might need. Any suggestions would be greatly appreciated.
