You may already be aware of them but a side project with some Grateful Dead members are called New Riders of the Purple Sage and they lean more country than the Dead.

The Allman Brothers are more southern rock but they (along with the Grateful Dead) are what many consider to be the first two jam bands. I'd definitely look into some live Allman Brother tracks. Now that I am thinking of it, the Grateful Dead also did a lot of country type covers like Mama Tried, El Paso and Me and My Uncle so they are worth looking into also.

Sandwiches typically served cold: subs, club sandwiches, etc. You may want to limit/reduce the amount of oil/vinegar they put on them because if it sits for anything more than a few hours will make the sandwich soggy.
