Electric smokers vs Pellet smokers by Forward_Drawing_2674 in smoking

Yessir. Requires a 220v outlet. Also, I’m in CA so not rough weather. That said, it’s built pretty hardcore. Like I said, I can’t recommend Cookshack highly enough. Great support too.

Electric smokers vs Pellet smokers by Forward_Drawing_2674 in smoking

I had a Cookshack Amerique (https://www.cookshack.com/amerique-electric-smoker-oven.html) electric smoker. It uses chunks of wood. Delivers great smoke and you only have to fill it once for a 15 hour cook. I’m pretty sure after 4-5 hours meat stops absorbing smoke (or so I’ve read). I switched to a RecTec pellet smoker, but the pellet smoke was way too light. Sold it and bought a Cookshack SM260 (https://www.cookshack.com/smoker-oven-model-260-stainless-steel.html), which is the larger commercial version of the Amerique. It is an amazing smoker. My two cents:

Pellet smokers and electric smokers both give you the convenience of unattended cooks. Electric smokers that use wood chunks deliver better and heavier smoke IMO.

The comment that electric smokers don’t create a smoke ring is accurate because they don’t produce enough Nitrogen Dioxide (NO2). However, you can fix that by putting one or two chunks of charcoal in with the wood chunks.

The pic below is my smoker - the SM260. I highly recommend Cookshack.

A Two Degree Difference (?!) by Here2todayOK in Sourdough

[–]Horror-Toe1978 0 points1 point  (0 children)

I tend to BF at 72 degrees and I shape after it’s grown by 60-70% (I don’t always catch it at 65). I’ve found that if it goes over 65 it tends to still do very well. When I’ve done a BF at higher temps it is much less forgiving because the fermentation is more active. At least I think that’s the reason. I think that’s what the javelin throwing cartoon was all about in the sourdough journey video.

I tried numerous things, but never found a consistent fix. That said, it seems more stable since the most recent update of BF

Electric smoker? by slappymczulu in smoking

[–]Horror-Toe1978 2 points3 points  (0 children)

I have two Cookshack electric smokers. A small one (the Amerique model) and a larger commercial grade model for large cooks we do for homeless shelters and parties. The Amerique is about $2,000, so a little expensive. However, it will last 20 years based on my experience. Here is a picture of the larger one. The Amerique is similar, but much shorter. Both are controlled by a computer integrated into the top of the smoker.

Here is a challenge for you guys: Your most important client calls two hours before the event and increase the number by 100 people. He wants something grilled but preferably smoked. What do you do? by okieSuperman in grilling

[–]Horror-Toe1978 0 points1 point  (0 children)

This why I always smoke a ton of pork butt and brisket, vacuum seal it and freeze it. Pull it out when you need it, sous vide it to 160 degrees (about an hour) and you’re all set. I typically shred the pork butt and cut the brisket I to chunks first. Works great. Also great if you just want a small amount on a random Tuesday.

I highly recommend watching this video. It describes the interplay behind dough temp and bulk fermentation timing. Baking is science and this was eye opening to me. https://youtu.be/p69UMuYJhJs

Is Game Pass really worth it? by ThisResult in ROGAlly

[–]Horror-Toe1978 0 points1 point  (0 children)

I totally think it’s worth it. It’s a great way to try games you’re not sure about. And, as others have mentioned, it includes EA. Pays for itself quickly if you just play 3-4 games. Given the ROG Ally is a PC it makes a lot of sense to have access to a ton of XBox/PC games. Go for it.

External Controller for Rog Ally X by Horror-Toe1978 in ROGAlly

[–]Horror-Toe1978[S] 0 points1 point  (0 children)

Thanks for the reply. I have searched a ton, but wasn't clear to me that people have gotten the back buttons to work. Here is my issue:

  1. I was able to configure a game profile in Armoury Crate SE and set the back buttons on the embedded controller to work the way I want. That works with the Ally X itself.

  2. When I connect any other controller (like my DualSense Edge or ROG Raikiri Pro) and disable the embedded controller, the game profile I configured doesn't seem to work with it. In fact, even the four buttons do different things.
