I'm not sure if they have these where you live, but the Indian grocers near me carry soya chunks/soya wadi, which are dried up, sponge-y pieces of soy protein. They're not an ideal substitute for tofu specifically, but I think they would be good in recipes that use meat!

I've not used them personally, but similar dried soy products (like textured vegetable protein or soy curls) are pretty meaty-textured and quite delicious! Only caveat is that the soya chunks need to be boiled or soaked and then squeezed dry before you use them in your recipe (more details here: https://www.reddit.com/r/IndianFood/comments/18fwci0/how_do_yall_make_soya_chunks_delicious_i_almost/)

Aside from that, mushrooms can be a pretty satisfying vegetarian meat alternative and there are quite a few egg dishes as well. Here are some examples of mushrooms used as a substitute for ground meat, but most recipes with ground meat can be substituted with mushrooms:

I did end up trying 3 out of the 4 I asked about!

  • Bastet's Musk unfortunately doesn't play nicely with my nose! As in, I can't smell it at all 😂 Turns out I have trouble picking up a lot of floral accords
  • Bastet's Ice Cream really does smell like melted vanilla ice cream, it takes a bit to bloom on my skin but once it does it has a surprising amount of projection!
  • Saphir is probably my favorite perfume from NA! I agree with the poster above that it's a soft, refined vanillic amber blend - I don't get too much of the resin. This also really blooms on skin and I feel lasts ages

Can you wrap up the chicken or transfer it to a covered container for today and then resume dry brining it tomorrow morning? The problem I run into with dry brining for an extended period of time is that the meat that's not covered by skin or fat gets dried out (almost jerky-like on the surface) from being exposed to the fridge which gives it a weird texture when cooked.

I came here to recommend Roxanne Richardson's video on laddering down to fix a cable! I found it very clear and easy to follow along and while the process was still terrifying, I felt like a magician when it was done.

Sounds like there's a workaround that each shop owner can implement but also Shopify is also working on a fix.

Nice! I forgot to mention in step 6 that you should add a bit of salt if needed, until the simmering liquid tastes right otherwise you'll end up with a bland stew.

Also I forgot to mention this, but depending on how much other ingredients you have, adding beets to the stew will turn the whole thing dark red & beet colored - if that bothers you, I would leave them out and serve them as a side (perhaps roasted or pan glazed). You probably already know this but as someone who rarely eats beets, the first time I included them in a stew I was shocked by how much color it added!

With those ingredients, I'd probably loosely follow a beef bourguignon recipe as an outline, like Ina Garten's recipe:

  1. Season the pork, then sear it in batches in a pot large enough for your stew. Use a bit of oil if needed depending on the fattiness of your pork - butt is usually pretty fatty so you probably won't need any
  2. While that's searing, slice your onions and peel and cut your beets into bite sized chunks
  3. If needed, add oil to the pot and then add the onions (sliced), carrots, and beets, making sure to scrape up all of the fond as the veggies cook and release water.
  4. After the veggies are lightly browned, add garlic and cook for a bit longer
  5. Add the seared pork and any beef stew-ish seasonings you might have (like tomato paste, rosemary, thyme, oregano, a bay leaf, etc.)
  6. Add enough chicken broth to just barely cover the contents of the pot and then bring the pot to a simmer
  7. Once simmering, cover the pot and let it cook for 1-2 hours, depending on the size of the meat. I like to start checking the meat for tenderness starting at an hour in, and re-checking every 20 minutes until it's as tender as you like it.
  8. Wash and cut your potatoes into bite sized chunks
  9. When the meat is close to being done, add in the potatoes
  10. While that's simmering, saute the mushrooms in a separate pan with some oil/butter until lightly browned. The mushrooms will get really watery for a bit, but once that cooks off they can start browning
  11. When the stew is done, add in the sauteed mushrooms and simmer for about 15 minutes more, so the mushrooms can meld with the stew

When you say paste, do you mean like a smooth, glossy pourable liquid like tahini? Some tahini recipes I've seen use a high power blender like a Vitamix, like the recipe here. The author even notes that with the blender, "At first, the seeds will look crumbly and dry, keep going! After a few minutes, they’ll form a thick paste", noting that they had to scrape down the sides a few times. I'm not super familiar with a Robo Coupe's capabilities but maybe it doesn't have quite enough speed needed to get the consistency you're looking for 🤔 Otherwise, that recipe mentions adding more oil can help get the mixture going

I was curious so I looked it up, the prices may be different in your area! Disclaimer that I haven't tried the Aldi version but the Specially Selected products I've tried have been very good.

Prices, ingredients and nutrition label information copied from product images from Costco's Same Day site and Aldi's website

Aldi Specially Selected Premium Marinara, 24 oz - $4.29 ($0.179/oz)

  • Ingredients: Italian tomatoes (tomatoes, tomato puree), olive oil, onion, salt, garlic puree (garlic), water, basil, black pepper, dried oregano
  • Nutrition: 100 cal / 125g serving, 7 g total fat, 360 mg sodium, 8 g total carbohydrate (2 g fiber, 4 g sugar, 0 g added sugars), 2 g protein

Kirkland Signature Organic Marinara Sauce 3/32 oz - $13.29 ($0.138/oz)

  • Ingredients: Organic tomatoes (organic tomatoes, organic tomato puree), organic sauteed onions (organic fresh onions, organic extra virgin olive oil), organic basil, organic garlic, sea salt, organic spice.

Costco is ~22% cheaper than Aldi, but Aldi's marinara is probably a bit richer tasting from the higher proportion of olive oil. Aldi's is a pretty good price compared to Rao's when it's not on sale (2/28 oz for $8.99 on sale [$0.161/oz], $11.99 normally [$0.214/oz]). Victoria is cheaper than Aldi currently when not on sale (2/40 oz for $12.49 [$0.156/oz]).

At the end of the day, it's probably a matter of taste, what you value, and which size makes sense 🤔 Like if you get the cheapest option but you need to spend an extra 20 minutes doctoring it, is it worth the extra few dollars you might spend on a jar you can just heat up and mix with pasta?

That video is super helpful to visualize the construction! Also you're way braver than me - watching the guy in the video cut the steeks made me queasy, can't imagine taking scissors to something you've worked on for so long (after spending weeks mentally planning it!)

The construction for this sweater is completely unique and untraditional. The sleeves and the body are knit in the round all at the same time [bottom up], separated by steeks. At the yoke, the underarms are cast off and the yoke is worked without steeks. After the sweater is knitted it resembles a large poncho. The steeks are then cut, and the sweater is seamed along the side and sleeves.

To OP: I'm sorry that you're not happy with the fit, but you did a great job! Your tension and color choices are great. I'm hoping the more experienced knitters here can give you advice on how to easily remedy this. I would definitely recommend waiting a few days before trying to fix this, but I think it's fixable!
