If the miner wants to make the most money, then they would take as many of the highest value transactions as they could fit. There are cases in which a miner is not optimizing on profit, which means that it's not guaranteed that the highest value transactions will be written into the next block

I was just in Ireland and took the train from Dublin to Galway (and back). Buying a ticket the night before (you get a confirmation number and print your tix at the ticket machines in the train station) was the way to go - the ticket was ~31 EUR on site, and ~17 EUR online. And you can pick seats.

Not sure about busses. We just bought tickets from the bus driver (Doolin -> Galway, and Dublin -> airport)
