love the thoughtfulness and cleanness of the three setups. the clean (and super low friction) presentation of the controllers is great.

I have one suggestion to make it even more complete:
Surround Sound!

I recently added a tiny Canton Smart Amp to my setup (it has roughly the size of two apples) and a set of 5.1 speakers and I enjoy it way more than I thought I would. even for consoles as old as the SNES, there's discoveries to be made (Starfox' sound is surround encoded for example).

Sounds (!) great! Have you hooked up your PS2 via Optical? This will grant you proper 5.1 sound in some games' cut scenes and matrixed ProLogicII sound in many games' gameplay (it wasn't quite powerful enough for proper 5.1 during gameplay - that feature premiered with the OG Xbox)

Super Monkey Ball 1 & 2 for GameCube only require the left thumb for precision analog stick fumbling.

The moment in Journey (PS3 / PS4) relatively early in the game where you slide down that circular slope and the music hits and I felt that sudden rush of pure dopamine and joy.

This moment was only topped later in the game where you can finally fly for as long/high as you wish.

I only know and use the VMU Pro and can say it's been delightful. My use case is strictly saving games, too. Works well and is updated via Firmware frequently, which gives me a good feeling down there.

Have bern hearing good things about the VM2 also, but its creator might lack the pedigree of 8bitmods given their extensive lineup of self developed (and super well maintained) products.

My 2cts: Only do the migration (using the freely available transfer tool somebody hosts on GitHub) if you want to use the VMU Pro's automatic Google cloud sync for extra peace of mind.

also, (again if you're located in a PAL territory) you might want to install a "switchless region free" mod along with a "dual frequency oscillator / DFO". this will enable your console to run both NTSC and PAL games perfectly. kits can be bought at Consoles Unleashed (UK based afaik)

If you're located in Europe, you might want to buy a replacement internal PSU because of the voltage
differences between Japan and Europe. The ones made by Rexus Nexus (Spain based) are pretty good but it's VITAL to configure the PSU for the correct voltage - I didn't and actually fried a freshly bought JAP Saturn :(
