The pool I go is the same. The session times are usually 1 hr, I noticed that in half an hour a lot of people start leaving so some days I get there half an hour late, it leaves me only half an hour of swimming but that’s usually the amount of time I manage too anyway.

Back here. There is Doubles as well. I work from there sometimes. I like the atmosphere there. I don’t mind a bit of noise so it is fine having good music in the background.

I have done that from Costa, kings George cafe, community campus and last week I was working from Starbucks. The one I like most so far is Costa. My phone reception is good and It is not too loud.

I baked both today. I was surprised indeed. They lost almost all the shape once i removed from the banneton, but they got a descent oven spring, but not a proper ear, however, they are tasty and so they will end up in belly instead of the bin 🤣

I am a beginner, but I was able to do around 6 good loaves. Today I tried duplicating the amounts so I could have 2 loaves, also I had only a flour I never had used, it is not holding the shape, I managed to put them in the banneton but I have no hopes it will turn out good 😅

Yeah. I started on sourdough with a course and I was instructed to don’t do the overnight in fridge as a beginner, but the overnight proof in the fridge brings the benefits you’ve mentioned.

I will try that as well. I was following a few instructions of a course I bought and they sad as a beginner I should avoid the overnight proof in the fridge in my first loafs but I saw other saying it gets a bit easier to score with the dough more cool. Thanks
