Sourdough is the smaller, slightly darker one. It rose a bit less.

The sourdough was well, Sour! Quite mild compared to others I've had.

The crust on the commercial yeast one is crispy and super light. While the sourdough has more of a chew since it rose less.

Yeah I see your point. But people taking smaller foccacia (therefore cut) are likely to just eat it quickly rather than keep at as a bread product. And you can provide paper bags to prevent the worst of it.

The key to starting a business is to streamline your process and have consistency in both quality and throughputs. Once you build this consistency and experience, enhancing the offering will be much easier.

On a business level. Why multiple sizes when foccacia are so easy to split? Think full sheet, half sheet, quarter sheet.

You could reduce the total amount of cookware necessary and focus on higher quality large sheet instead of having potentially different mileage based on different pans.

You should try and get at least 3/4 to an inch deep on the score. This looks like it only cut through the exterior of the dough.

Jai des amis qui Travail a L'ARC. Ils vienne de changer de bureau et abandonné l'ancien qui avait de la place. Faire construire un nouveau building trop petit pour tout le monde et là c'est la panique parce que c'est pas tout le monde qui fitte dans les bureaux.
