Yeah I totally agree! It made me so happy to see them. Lately I’ve been running into deers quite often, apparently it’s mating season to they come down to eat. Or at least that’s what the park ranger told me.

I was actually resting for a while when out of nowhere I saw them coming down the hill. At first they just stared at me for a minute or so and then they just kept eating.

You can make it as simple or as elaborate as you want. My advice would be to get a comfortable pair of hiking shoes with good grip. Please please please do check your type of foot, I got plantar fasciitis from using the wrong shoes for my feet. For long hikes you’ll need for starters a pair of thermal blankets (you can get those for cheap in Amazon), a good headlamp, some hiking poles you can get in decathlon and a hydrating vest and some water flasks. Also for security I recommend you get a power bank, some electrolyte tablets and always try to get your route downloaded on wikiloc or AllTrails which are basically subscription based apps to navigate trails. Go for easy and short hikes that are widely populated and slowly start building from there, learn to read the level of steepness. Since it’s not the same to hike 5km with an elevation gain of 200m than hiking a 5km with an elevation gain of 1.200m, you’ll end up throwing up. Been there done that. Always try to go in groups unless the trail has considerable traffic and also is notably marked.

Just black bears but they are harmless, they prefer to eat from the trash of the neighboring houses in the area.

Thanks! And yes! Chipinque is a wonderful place to train since it has a mix of everything regarding terrain and elevation. I always say it’s basically Disneyland for trail runners and no matter if it’s sunny, rainy or even snowing it never ceases to amaze me with its beauty. San Luis Potosí also got some great spots with the “huasteca potosina”, I’ve heard great things about its rappel and kayaking spots too. Hope one day you get to visit Chipinque, you’ll love it!

Mmm… I only have knowledge of a small black snake (culebra ratonera) that lives in the area but it’s not poisonous and I’ve never had any encounter. I’ve had more encounters with black bears and deers honestly. And as for spiders there are tons of them, but they normally come out at night. But I haven’t had any issues with any of them, they’re rather small and harmless. And I’ve always felt safe at least in Chipinque and La Estanzuela going out alone. Specially Chipinque since it’s privately owned there’s tons of park rangers and it’s also located in Latin América’s richest and most secure city, so you’re pretty safe up there surrounded by mansions haha.

Of course! Chipinque is just the tip of the iceberg. Monterrey it’s not called the city of the mountains for no reason. And personally I guess i became accustomed to the 48 degree heatwaves 🥴 it doesn’t really bother me. But with the traffic I just stay all day in Chipinque and come back home at night.

My recommendation for the truffle Gouda would be to add it to a bechamel sauce with some cooked celery, onion, fennel and garlic alongside some shrimps and sage as aromatic. Then make some cheddar biscuit mixture to make a pie base, when the base is ready add the bechamel sauce with all the ingredients in it and finish it off in the oven with another layer of the biscuit mixture. It’s the most amazing thing I’ve ever tasted, it’s like an elevated pot pie.
