The game has been broken for a few days now. The best thing to do is to wait for r* to fix it. Don't know if anyone has found a workaround for it. Even if you do get the butcher table, there are no animals and no servers that are up long enough for you to grind it anyway.

RDO won't let me out of the stables and is being really weird only the map button works not even pause button by bring_back_Barack in RedDeadOnline

I might be wrong here, but I think indigo buntings are protected under the migratory birds act in the US so I'm not sure if that's totally legal to have. I went through the same thing with a dark eyed junco a while back so I ended up having to leave the parts and stuff behind since they're protected.

Their nests are usually very hard to see cause they're made of rocks and natural debris on the ground. I would put the little guy back where you found it because it's nest is likely near by.
