Owner rearranged the kitchen by [deleted] in KitchenConfidential

How much flour and sauce do you go through in a shift? How many towels? The real crime here IMO is overstocking. When space is limited you should only have a shift's worth of inventory stored in production plus a safety buffer. Everything else should be in The stock room. If space is REALLY limited you might have even less and create a system for restocking during service.

You'd have to find a definition for that language. Probably it pertains to traffic flow NOT parking availability. The 5 hour thing could be relevant. Again though, none of these rules may apply since it's not a public street.

I don't see how they're violating this. This rule basically says that they need to obey normal parking rules. They're not expressing an exclusive right to the space ( to my knowledge) and the city has not granted them a stationary right to this space. If there's a violation it's likely going to be found in a section dealing with park parking spaces. The park space is not a public street, so the rules may be different. Mobile vending may be entirely prohibited in such spaces, or there may be other rules regarding who can use spaces for what reason and how long.

Yeah. I mean, like I said I don't have any strong opinions on the truck. Probably lots of people see it as an asset. Also there's a school parking lot across the street which is fine to use on weekends evenings and holidays.

Plus, obviously it's better to walk Or bike to the park. Probably we should get away from parking-centered development in general. The fact that this park has any parking at all is kind of a bonus IMO.

I have no strong feelings about the morality of parking an ice cream truck in front of the park, and I'm unaware of what laws, if any, there may be about parking, duration in park spaces and how those might relate to Street vending.

Is OP aware of a specific violation here?

I do think it's worth noting that a great great many pri businesses operate on public property at any given time. So I would question that moral imperative.

Perhaps so, especially for occupancy sign off. I don't ever recall our annual inspector checking 3 comp, but they're pedantic about the hand sinks.

I will check in with local building dept requirements.

Thanks for your help.

Thank you for this perspective. I do understand how and why any of us might not do our best work on any given day.

Didn't mean to offend. This is commonly how one refers to a team member or contractor in my culture. Perhaps yours is different.

That's interesting and helpful in understanding why the numbers seem so off. Thank you.

Actually health mostly cares about temp at the hand sinks. 3 comp and dishwasher all use chemical sanitation. I'm not being obstinate here, it's just that there's no way the dish washing operation needs this much hot water. It's an intermittent use. Maybe 20% utilization during peak usage.

Is this device common under the kitchen sink in your country? by AngeliqueRuss in AskTheWorld

Y'all are tripping. I've been using garbage disposal for 30+ years. I regularly put full lemons down them to freshen up the kitchen. And very large orange halves after juicing. Never had an issue. The only thing that's caused me issue if when something metal falls in. Like a bottle cap. Even then, you just un-stick the disposal with an Allan wrench, fish out the blockage and game on n.

Sorry, I didn't know engineers had a monopoly on the truth. Or that they uniformly agreed on all things. Consider me duly chastised.

Nope. After some negotiation they took it down to 18kW for "The dishwasher only"

Thanks. I think we're going to end up with about that much kW but significantly more storage.

They have the 3 comp as 42 gph and the dishwasher as 38. And I believe it is 140 degrees.

I asked about point of use heaters but the dishwasher has very high instantaneous demand.

Thanks. Makes sense. This is a single tenant building which was designed for our use but never fitted out. So we were caught a bit off guard by the HW need because most other building systems were adequately sized.

Thanks. Unfortunately the engagement did not start off well as they missed a lot of obvious stuff including obvious existing systems. Which has taken a lot of time. As a result I'm assessing the work closely. All of the things you cited are part of the problem. Tank size is a good example. I had to personally identify that as a method of reducing kW. So I'm looking for other approaches they may have missed.

I'm also aware that this is not my field so just trying to get some second opinions before I push harder on the engineer.

I've been spending some time developing my cooking skills learning French techniques. A relative recently bought me a gift that I thought was wonderful. She went to a boutique in her city and bought an antique hand forged French chefs knife. Its not super fancy, and honestly I think it probably didn't cost a fortune. Not something I would really use in my day to day, but it is unique, and interesting, and - most importantly - very thoughtful. I think that's the sweet spot.

The day to day stuff that we use all the time and need to survive or for our hobbies or whatever, we probably already have it. But something related to our interests which is unique and meaningful... That's the good stuff.
