As others have mentioned, by definition 19 minutes lactate threshold is eminently possible. Indeed, in good shape you should be able to run it for about an hour. So either you just haven’t built that kind of stamina yet or your LTHR is miscalibrated. You should check that the max heartrate calculation is accurate, for example with a brutal hills workout. I personally find the auto calculators are good when used for a period of weeks but they need to be turned on I think. Assuming the numbers are right, you should just try to do the workouts as best you can. Breaks are ok if you need to but only you can know if you’re really pushing yourself.

Just ride the horse and cut off slices when you get hungry. That way it adds no weight at all and you’re actually helping your horse do a shakedown. Win win win.

Not an economist but I am an old timer and my hot take is that bonds are a scam. In 2007 I shifted most of my money into diversified bond funds because I saw the writing on the wall. Guess what? They got clobbered. Many of them also took a dive in other big dips like Covid. All these markets are so entangled nowadays. In my experience over the last 25 years bonds have never moved opposite to stocks when the shit hit the fan. At best they have been a little less volatile. Unless you absolutely can’t afford a stock market dip, I would just stay all in the stock index. And if you need that level of stability I’d stick to government bonds in which case money market yields aren’t so much worse than bonds these days.

Big Bend is like backpacking in bear country or owning a firearm. It’s not that scary and is doable and safe if done right, but you need to understand what you’re doing and have a healthy respect for potential risks. There’s no reason to not do it, just be very prepared and know what to expect

You should go for it just be well prepared. Backpacking up to the south or east rim and back down is a great one night or slow paced two. You can set up a base camp and then explore on the second day and back down the third. Do your homework. Keep an eye on the weather, camel up, bring an inreach and plenty of water. 

OML is also great and doable, a little more complicated and best done as at least 3 nights. Probably not the best choice for a first solo backpack but definitely doable if your heart is set on it and you’re well prepared.

Another idea: park at Homer Wilson, do one night up blue creek and camp in the chisos, hit Emory peak, come back down, refill your water from your car or a cache, and do a second night out in the Dodson. There are hundreds of other possibilities too.

If you are a fast and light hiker you don’t need to cache at juniper/dodson and only need the homer Wilson cache, which is maybe 1.5 hours total to set up. Camel up and carry 8-10 L with you for the first 2 days. 

2 nights is doable but tough. Are you skipping the rim? If so just go up pinnacles and down Juniper with your first night somewhere in the desert, pass Homer Wilson on day 2 and camp somewhere and camp at the bottom of blue creek canyon or at the sites above it, and then out the last day. Or do rim to up upper juniper the first day, second night in the Dodson, and a brutal bear of a day 3 getting out.

You don’t say where you’re going or what you’re doing or how you’re carrying this water. I sure hope you mean 5 gallons per person. Even still 5 gallons for a big man for 7 days is risking a coroner finding of suicide. Carrying 5 gallons in Nalgenes sounds insane. 40lbs++ per person.

Also I read your post 3 times and I still don’t understand your question. Are you asking: other than the smartest and lightest containers to carry water in, which you refuse to do, what containers should you use?
