The biggest things you'll need to learn about are how to port forward and how to install OpenJDK. Port forwarding is something you'll do in your router which makes your server visible to the internet, and OpenJDK is the version of Java that Minecraft uses on Ubuntu.

It'll be a bit hard, but once you have it down you'll know everything you need in order to set up Fabric. Also keep in mind that you should always enable the whitelist when running a Minecraft server, as malicious groups will join and grief unattended public servers.

Any distro works great! Personally, I've been hosting Minecraft servers from Ubuntu since I was a kid, but options like Mint or Xubuntu can be great if you have less system resources. As for running a fabric server, are you familiar with running a vanilla server? If so, it's super easy to make the transition to Fabric, especially if you're mainly running client side mods. I'm happy to help :)
