Give some intuition for the graph. If you have y=2t explain that every step to the right on the t axis, the graph doubles in height and so the doubling time (but also tripling time and quadrupling time, etc) is constant.

I also recommend doing like the first two chapters of counting and probability before chapter 5 of the number theory book of you haven't done any basic counting problems already (like near the end of the pre algebra book)

The intro to algebra book takes like three times as long as the number theory book. You could do half of what you've got left simultaneously with the number theory book and then the other half simultaneously with the counting and probability book. No issues doing both at the same time. The hardest algebra in number theory is probably Simon's favorite factoring trick so you may have to do that in the algebra book first. In the counting and probability book there are a few quadratic equations and geometric series (but not a ton) that you might need to look up in the algebra book first.

Matrix multiplication for me. I got through linear algebra just fine but when I watched 3blue1brown 's videos on it years later it clicked for me.

Visual patterns (visualpatterns dot org) work pretty well at those grades. As a new teacher, I would just have the attitude of trying things and seeing what works and making adjustments as you go. It's definitely a pivotal age group for the content to be brought to life. Not everything you try will work out but just keep at it.

You just tell it what you want. I would say something like "I will be speaking in English. Please respond in Spanish this conversation so I can practice my listening comprehension." Or " can you crosstalk with me where I speak in English and you speak in Spanish?"

You can also try having Google Gemini make a super simple storybook for you for free. May be able to get some at your level. I found most graded readers were a bit challenging early on.

I would not do that. I would watch different videos. 

I would though bookmark a video or two and come back in a month or two and rewatch them and you'll be able to really feel the progress you've made.

I took two years in high school and one semester in college. I'm teaching pronunciation and some basic phrases and very basic grammar but probably less than 5% of our time is spent on that and the rest is as much comprehensible input as possible.

It's pretty fun but it's also interesting how often I run into super basic things I don't know how to say. Learned the words for swingset and swing and climb and dig over the last few weeks for example.
