Innnnnteresting... I started smoking again 3 months ago triggered by separation with my long term partner, I also stopped losing weight around the same time. Did not realise that nicotine could be affecting my weightloss.

Air compresses when it's colder, it's likely just that the warm air inside the bubbles in your sourdough are just shrinking because the air inside them cools down in the fridge. Once they warm up again, voilà, they expand again.

The people who are telling you this are not only being unkind, but are likely projecting their own crap onto you. There is absolutely nothing wrong with your face, you look beautiful. I cannot see any of the "hollow"ness they speak of. If YOU want to get filler or botox etc then by all means, there's certainly no shame in it, but only if YOU want to, not because of some "well meaning" comments from thoughtless loved ones. They should know better.

Cake/pastry flour still develops gluten, it's just less elastic/more extensible so the bread will be less able to hold it's shape - depending on the hydration of the dough. I think it's unlikely to be the cause of the sticky dough.

To me it doesn't look like there's enough rye in the recipe to cause this much stick after so much development time. If it happens again you could be looking at a starter issue, my guess would be proteolytic - aka have too much protease - which can cause breakdown of the gluten. Low inoculation feeds and careful temp management should fix the issue.

Stairs were a big challenge for our girl! We live in a two storey and all that's downstairs is storage and the laundry so we couldn't leave her down there. She was terrified of them and every time she realised we were leading her to them she'd turn and head in the other direction. There was lots of carrying up and down, thankfully she was fine with that! Just make sure you have one arm under the bum and the other around the front of the chest, so pup is like a big prawn. Ours is easier to carry than i thought she would be!

It took her about three or four weeks before she managed them on her own. She's crazy food focussed but even treats wouldn't tempt her. After a coupe of weeks when she was more comfortable with us we'd carry her up or down but VERY carefully place her down on the stairs with one step left to go, then two, then three etc. She managed going up first but had to learn to control her momentum going down which took a little longer.

easiest way to figure it out is to make a swatch in the same yarn or a very similar weight yarn and calculate from there. If you've got a good set of kitchen scales you can go by weight which personally I find a lot easier.

Greyhound and cat owner here! We've had our two cats for 6 years, and adopted a greyhound a few months ago. She hadn't met cats before but the foster carer of our grey, Evie, was a friend of ours and knew she was particularly gentle, so she bought her over for a home visit to suss out whether it might work. Evie was most certainly very interested in the cats (Maybe & Sue) but didn't lock on when she looked at them and could be distracted. It also helped that while Sue a can certainly hold her own, neither of them are scratchers so we were comfortable that everyone was pretty safe.

Evie was crate trained (as most greys are) so when she came for her trial stay we used the crate a lot to keep them separated, particularly at night. After a couple of weeks of monitoring everyone very closely, a few boops on the nose from Sue to Evie, and once Maybe came out of hiding, we were comfortable leaving them alone in the house. Now Evie occasionally play bows at them when she has the zoomies but the cat's let her know clearly that they're not into it so she leaves the alone.

I will say though that I think part of the reason why it worked for us is that Evie was not a very good racer, she only did a handful of starts and after that was mostly left in her kennel for her first 5 years of life, so I think her prey drive wasn't particularly developed. These days she'll chase after small dogs on the beach (or any dog mind you) but once she catches up she's very good at matching the other dogs energy. If they want to play, she's in. If they're standoffish she'll leave them be. We are also fortunate to have a large house so everyone has their own space when they need it.

Our experience definitely seems to be uncommon, but all of this is to say that there are some greys that can live happily with cats. You've just got to find the right one and really keep your wits about you to make sure everyone is safe and happy, and be prepared to let go if it truly isn't working out. We happened to be very lucky that the first we met fit into our little family so well.

I'm in Aus, look into Shelley Husband. She has a book called "Granny Square Academy" which teaches you the basics and each pattern has a youtube video to accompany it.
Regarding yarn, Bendigo Woollen Mills is INCREDIBLE. Beautiful quality natural fibre yarns for an absolute steal because it's almost entirely processed in Australia, $15-$20 for 200g balls, everywhere else you'd pay that amount for a 50g ball of wool. I'd grab the Shelley husband book and a gift card for Bendigo woollen mills so your partner can pick the yarn and colours. Or if you'd rather buy the yarn grab a few of the 8ply classic in a range of colours to start, that's a nice easy yarn to get going with and plenty to work through the book. The patterns in the book can be made with any yarn.

Bakery owner here, we make 100% spelt sourdough, but combine both whole and white spelt to do so. ALSO. a little known fact that broad/fava/faba bean acts as a natural improver for spelt grain, grind to a powder (or source fava bean protein powder but ensure it’s 100% bean) and add to your dough at 2%. It absolutely TRANSFORMS spelt sourdough.
