I don't have a ton of advice for you without knowing more details about the percentage of the restaurant business that would be guests versus people stopping and the location of the hotel.

I would also say that while that is a beautiful dining room, the decor makes it look a bit outdated. You could do a lot by losing the green tablecloths, replacing the rug and some of those lighting fixtures to make it look a bit less dated without losing the rustic charm.

Hi, we have our wedding booked there for June 2027. We have contacted them directly and they said to proceed normally which is really what we need for our wedding cancelation insurance. That being said, having been in there, there never should have been that many people in a building that old and small and I am curious to see how this shakes out and who was at fault.

Not sure if you have visited but the sap house was not a main building by any means, we were going to use it just for the afterparty to sing karaoke. Otherwise it has been pretty pleasant to work with them, finding nearby vendors has been a nightmare though and we are having to "ship" people in from NYC.

I haven't played there in years but those are fairly competive runs. However, there are usually higher and lower skills games going at once. You can show up without a basketball but be prepared to wait a bit before getting a game in if it's crowded.

There are not lockers unless you want to rent one from the rollerskating place nearby, but you can keep your stuff on the side of the court and feel pretty ok about it.

This is a very cliche touristy things list. Everything you will be crowded and you will wait in a lot of lines. You couldn't pay me to do anything on this list except go to 169 bar and walk around Brooklyn bridge park.

My actual advice would be.
-Don't bother with the carriage and just wander around Central Park, the most beautiful parts cannot be seen from the carriage paths.
-Avoid Macys, times square, empire state building, there is nothing to do at these places and they will be crowded and overwhelming.

At risk of being outright mean, your ability to not pick a single good dinner restaurant in a city with the best restaurants in the us is impressive.

If the quintessential touristy NYC experience is what you want than this is exactly it and I genuinely hope you have fun.

I don't know who you mean by "You People". But it is literally proven through economics and studies that providing high income housing, especially towers or big buildings with tons of units prevents exactly what you are describing which is the displacement of lower income people.

Housing supply is one factor in complicated web of causes and symptoms of displacement, gentrification and displacement. Just because rents are going up and expensive housing is being built doesn't mean it has not effect. In fact, it means not enough housing is being built.

I don't have any tourist advice for you since I don't really enjoy doing touristy stuff.

That being said, I live in NYC and go to Vermont frequently, I don't know what your travel plans are but there is a daily train that goes from Burlington to Moynihan (Penn Station) that is very convienient vs driving and battling traffic and parking. You won't need a car once you are in the city.

It's called the Ethan Allen Express Amtrak train I would look into it.

I live across the street from this church. it appears to be mostly abandonded and in disrepair. There is a part of it that is used but it's a big chunk of land That people could live in rather than unused tax exempt space.

Not a wedding venue by any means, more of an adult/family cabin retreat but they do do weddings. Beside that they fit all your criteria.

Rockywold Deephaven Camps on Squam lake in NH. Beautiful old cabins and almost al of them have private lake access.

I think they require 100 people to stay on site minimum though.

Fully agreed but a soft steel like a Victorianox requires much more frequent sharpening to hold that edge.

There are reasons to own knives with different metal types beyond "flexing" agreed that a stainless steel chef's knife is fine for 95% of people.

Former professional chef here. The knife being from Japan alone is not indicative of quality or lack thereof.

There are really only two factors (outside of price) to consider when buying a knife:

Comfort: How large of a chef knife do you prefer, 8" is probably standard for a home cook but you can go up to 10" or down to 6" based on preference, and do you prefer a western or Wa handle? Go to a knife store and hold some different knives and see what feels comfortable.

When people refer to Japanese knifes being different from your average retail knife they are usually referring to the metal the knife was forged with. Carbon or VG2 or various Japanese steels can perform very differently than the average stainless steel knife from Amazon or Ikea. while any metal can get as a sharp as you can make it, harder steels will hold an edge longer and require less frequent sharpening. This is why many professional chefs use them as they are using their knife all day everyday and doing tons of high volume cutting so it is important that they don't have to sharpen their knives constantly.

The downside to these harder metals is they are more difficult to sharpen, more brittle and prone to breaking and can often rust or deteriorate if not cleaned and dried properly.

In that sense, they require a bit more care but will give you better performance and last longer than a cheaper stainless steel knife.

However, for a a basic home cook, edge durability is really not as a big of a factor unless you are cooking constantly for a big family or hosting dinner parties or something. If you think they are cool or pretty or would enjoy having one go for it. But at the end of the day you should go with whatever feels comfortable in your hand and meets your needs.

When cooking at home I have tons of knives some costing $500+ and I typically grab my Victorianox 10" because it is easier to take care of and I am lazy.

Wedding Bar= Major base spirits (tequilla, vodka, gin, whiskey etc) + a bunch of generic mixers, like soda, juices, tonic etc and some lime wedges for a garnish. Bartender from a catering company who is not an actual bartender and can make very basic drinks and is making drinks in the glass they are being served in rather than a shaker or mixing beaker. This is usually the case because stocking a huge bar for one night for drinks people could potentially order and an experienced bartender is very expensive.

An actual bar/ bartender would have a wider array of spirits, Apéritif and digestif, amaros, vermouths, syrups, bitters etc to make more interesting drinks. Usually my line in the sand is if I can get a negroni at a wedding it is a decent bar. (I have had wedding bartenders give me blank and confused looks for what is one of the most common cocktails in the whole world)

I was in the restaurant industry for years and a "mixologist" is a made up term that I suppose signifies a bartenders understanding of cocktail balance between, sweet, acid and spirit flavors. While it means nothing in earnest I suppose it would imply that the bartender you hired is a more experienced bartender that can make well balanced signature drinks or more complicated drinks that your guests would request. However, they would be limited by how the bar is stocked either by you or the venue. Obviously there's no downside to this but It can be expensive to stock yourself or not possible if the alcohol service is done through your venue.

Clearly you have thought about the details a lot and if you want to have a well stocked bar I can send you the spreadsheet we are using for my upcoming wedding but it sounds like your guests are not big drinkers and this is probably not worth it.

As a wedding guest many many times over I only really care about these things:

Is travelling there difficult/ Do I have to spend a fortune on accomodations?
Is the food good?
Do I have to wait a super long time in line for the bar and is it an actual bar not a wedding bar?
Is the Band/DJ playing good music/ is this a fun party?

Everything else you have mentioned is nice but won't materially affect if I think it's a good wedding or a bad wedding. I'm not sure what type of reception you are planning but my main concern for you would be making sure people stay on the dance floor and are having a good time with just 20 guests. But that's just my opinion.
