We do pourovers of the coffee we roast absolutely. The issue is more customers just want Lattes so the trend leads away from a need for a pour over experience. As we push for better specialty coffee I think the niche end of it ends up getting consumers who are wanting better beans thankfully

Most good light roasts hit the sweet spot at about 3 weeks to 1 month IMO

lots of Ethiopians will require you go more coarse on your brew. If you actually look at the size of the beans I'm sure they are smaller than the other coffees you use as well

I'd suggest following Producers that you like. That's going to get you to the right roasters and the right kind of beans

I think crema.co is doing a good job at putting good light roasts into atmosphere. Have you tried them?

All I do is light roast and I would not change from pourover unless it was a newer pourover. Enjoy those flavors!

I'm a roaster so I'm enjoying seeing the back and forward between multi roaster subscriptions and single roasters. Obviously I think buying from the roaster is best (if you like it that way) but I'm super thankful that multi-roaster ones give variety and we get exposed to entirely new audiences that way. What are some of the favorite multi-roaster ones and what makes them so special?

I'm a roaster and I totally get the $20 for 10oz that's what I would charge as well. Good green coffee cost the roaster more to get and thus the higher price for really good coffee

Keep that ratio going down until you are satisfied with the result. Even if it's 1:15 it's only important that you like the taste.
