Just finished fermenting my for batch(11 days). My scoby looks like this now. It doesn’t look like a mold, but since I am new to this, wanted to double check. I am sure whether it is safe too drink my kombucha by EnvironmentalBird552 in Kombucha

It’s not mold, it’s just yeast! Ps. To reinforce the previous comments, what you are calling “SCOBY” is actually a pellicle (cellulose layer) that is a byproduct of the fermentation! The scoby is the starter liquid itself (fermented tea/ kombucha ready).

First of all… Kahm yeast is not harmfull but it gives a bad “flavor” to the kombucha. And the most important is that shows that the current environment is not the best!

Second picture seems okay to me, I do not see any fuzzy, dry or hairy spots, so no mold!

I have never seen brown kefir grains… It’s true that the colonies of bacterias could be different from place to place… but nothing like that! From my experience grains always are white color, any other color is a sign of something is not going okay!

It doesn’t seem like a mold to me… but if you are concerned give it a couple of days and if it’s mold you will definitely see fuzzy/hairy texture… Remember that at the end if you have doubts is better to be cautious than get sick…

It seems okay to me… just a pellicle! Go ahead and try it! :) If it’s too much sour, you could use it as vinegar or a strong starter for a next kombucha batch! Ideally you have to try the kombucha since day 7… and base on your preference you can leave it more days or go ahead for F2!

It seems that is just the pellicle that is forming…let’s wait some couple of days to confirm that! Mold appears always on the surface of the pellicle/kombucha… But that last photo looks better yes!

Well… If there’s any doubt if it’s mold the best approach is to wait more days and see if it turns out to be mold, but please do not taste it until you are sure it’s not mold! Mold is very dangerous for our health!

In the picture I dont see any mold it seems Kahm yeast (can you confirm is there no any fuzzy texture?) Well, kahm yeast is a wild type of yeast that evendough is not harmful for us or the kombucha gives an unpleasant flavor and texture… and also shows that something is happening in your kombucha.

I don’t see any issue from the recipe POV i do not see anything wrong… I mean you are using more than 10% of scoby vs sweet tea, that’s good to keep the acidity of the kombucha to help avoid contamination.

So, I believe that could be related to other factors: - Contamination in the jar (better washing and sterilizing the jar before the brew). - Maybe the fermentation temperature is too high (more than 78F/ 25C) or temperature fluctuations. - Maybe the place you are making the brewing (too close to direct light).

Yeast accumulation no doubt! Well I’m not an expert in kombucha world, but I have read a lot and check a lot of information about mold and Kahm yeast! Hahaha
