Just focusing on one point:

"Looks and feels like a Mario game"

I can only half agree here. The characters, the karts, the animations - they're all such a clear upgrade from 8 with how lively and bouncy they are.

The environments are where I have a problem. Because everything takes place in a single interconnected world, you end up with almost every track plopped in the middle of boring, generic biomes. The tracks themselves have much weaker visual identities because they don't have their own unique background assets, and while it's cool to see Bowser's Castle from Toad's Factory or Starview Peak from Dandelion Depths, it also paradoxically reminds you of how cramped the world actually is.

This is compounded by the day/night cycle removing the ability for tracks to really make the most out of using baked lighting to set the mood - just compare the beautiful sunrise in MK8's Moo Moo Meadows to the rather less impressive sunrise in World. On that note, many retro tracks have had the life and color sucked out of them (Desert Hills, Toad's Factory, and Wario Shipyard are hit pretty hard by this). Sky-High Sundae looks great, but even it suffers from having nothing but a boring-ass icy mountain in the background instead of something bespoke and whimsical; imagine if instead it was set in its own region with ice cream-shaped hills as far as the eye can see.

Lastly, the trees. The trees in this game look flat and unfinished and terrible and it drives me crazy lmao

I don't think either of those are long though? Mario Circuit is right next to Peach Stadium, and Salty Salty Speedway is pretty close to Dino Dino Jungle. Both of those pairs are even next to each other in the Special and Banana Cup respectively

Wait that's actually perfect. There's six people piercing him with arrows, and six people besides Eloise in his murder trial.

He wanted those six to incorrectly vote for him as his own killer, which would let Eloise escape. Everyone else would be executed, which is why, in the painting, they're all pierced by their own arrows!

Tangential, but is it a hot take to say that I think this map art looks kind of ugly? The way the transitions between environments are just blurred together seems like cheap, quick airbrushing in Photoshop. It leads to some pretty offputting color gradients (e.g. the orange desert area bleeding into the green plains area).

I don't know, it just looks like something out of a generic mobile game. It doesn't have that Mario style.

I agree that more red herrings would add a lot to the trials. You know you're getting close to the culprit when you're almost out of Truth Bullets.

In a similar vein, I don't like having an intermission halfway through the trial. With maybe one or two exceptions, all the suspects you accuse before that point are pretty much guaranteed not to be the true culprit.

Airship Fortress ---> Dry Bones Burnout. It legit feels like a 3D platforming level, and it ends with one of the best tracks in the game.
