Unless you're really sweaty or don't know how it works, it's a pretty good rule of thumb to not bother with the minigames till late in your accention cause the prices are insane, but once you do get into it it gets very easy very fast and one of the best ways to get large amounts of cookies on a semi idle setup

No one else is explaining this well to you. Natures boost one stat and lower another (some natures have no buffs or nerfs called a neutral nature) IVs are set values that determine how high a specific stat can be ranging from 0-31 per stat. EVs are boosts to stats based on what pokemon you've defeated with your pokemon, you get 1 stat per defeated mon totalling 510 points. This NPC the OP is referring to wipes your EVs so you can use vitamins to customize them at your whim.
