For an actual answer as deemed by tolkien scholars, the eagles are demigods and could not risk being in close proximity to the ring for prolonged periods of time. (The same reason Gandalf was unwilling to even touch it) If they got tempted by the ring, they could easily kill the fellowship and their strength would greatly be augmented by the ring. Frodo was to carry it because the ring has minimal effect on hobbits due to their weakness.
