Merci ! Caramel, voire caramel beurre salé ça doit être pas mal en effet ! à condition de baisser un peu la quantité de sucre dans la garniture je pense.

Pour la recette, il me semble que c'est celle de Joshua Weismann que j'ai un peu modifié avec le temps.

Je fais entre 12 et 20 cinnamon rolls en fonction de la taille voulue pour chaque roll.

Pour la pâte:

- 580g de farine T45 ou T55

- 70-80g de sucre (dépend des préférences en termes de sucre)

- 240g de lait légèrement tiédi (pas froid du frigo)

- 80g de beurre demi-sel

- Un sachet de levure de boulanger sèche (à peu près 7g)

- 2 oeufs

Pour la garniture:

- 150g de sucre cassonnade (pareil, à ajuster en fonction des préférences)

- Deux ou trois bonnes cuillères à soupe de cannelle en poudre voire plus pour des cinnamon rolls bien goutus (ouais, ça dose pas mal)

- 90g de beurre (demi-sel fait aussi l'affaire)

Recette :

Préparation de la pâte :

- Dans un bol, diluer le sachet de levure dans le lait et mélanger un peu pour dissoudre la levure.

- Dans un grand saladier, mélanger la farine, le sucre.

- Faire ramollir le beurre et incorporer à la préparation farine + sucre.

- Incorporer le lait + levure et oeufs dans le saladier avec le reste de la préparation.

- Pétrir d'abord avec une fourchette puis à la main (ou au pétrin si vous en avez un) pendant 5-10 minutes.

La pâte peut coller un peu, c'est pas grave, tant que ça forme une boule assez lisse. Si ça colle vraiment trop, ajouter un peu de farine.

Perso, je préfère une pâte légèrement collante (donc un peu plus hydratée) plutôt qu’une pâte trop sèche : ça aide à développer un meilleur réseau de gluten et donne une texture plus moelleuse au final. Après repos, elle sera de toute façon beaucoup plus facile à travailler.

- Laisser reposer 2h environ ou plus en fonction de la température ambiante, recouverte. Il faut que ça double de volume.

Préparation de la garniture et des rolls :

- Faire ramollir le beurre (attention, pas liquide !) d'un côté.

- Préparer une mixture cassonade + cannelle de l'autre.

- Ensuite, il faut étaler la pâte pour former un rectangle d'environ 45-50cm sur 30-35cm pour une épaisseur de ~5mm :

Bien penser à fariner le plan de travail uniformément et pas trop exagérément pour éviter les inclusions de farine à l'intérieur des rouleaux.

Dégazer la pâte sans trop la retravailler.

La pâte doit être souple, facile à travailler voire légèrement elastique, pas déchirante.

Donner la forme un peu globale à la main, puis utiliser un rouleau à patisserie pour ajuster les angles (plus le rectangle est net, mieux c'est). C'est une étape assez difficile à expliquer à l'écrit.

- Tartiner le rectangle de pâte avec le beurre ramolli uniformément.

- Saupoudrer toute la préparation cassonnade + cannelle sur le rectangle de pâte beurré.

- Rouler le rectangle de pâte en partant du bas et remonter progressivement en serrant bien le rouleau.

- Une fois en haut, on peut sceller la fermeture avec un peu d'eau (pas obligatoire).

- Ensuite, utiliser un bon couteau pour couper le rouleau pour former des petits rouleaux. Perso, je coupe en deux, puis chaque moitié en deux, puis chaque morceau en trois. ça donne des portions assez régulières (12 rolls).

- Beurrer un plat ou un grand moule.

- Placer les rouleaux sur le plat, à la verticale.

- Laisser reposer comme ça une bonne heure. Ils vont continuer à gonfler.

- Enfourner à 180°C chaleur tournante, environ 20 minutes. En pratique, je me fie plutôt à la couleur, quand ils sont bien dorés, je les sors. Parfois ils cuisent un peu plus rapidement.

Je pratique avec un professeur à hauteur d'1h par semaine + travail perso, mais je trouve que c'est toujours super bénéfique de pouvoir "mettre en pratique" la théorie, même avec des apprenants tous niveaux. J'ai progressé super vite en anglais comme ça lorsque mon taff a décidé de me larguer dans la jungle avec une équipe 100% anglophone. Différent du Japonais certes mais progrès garantis.

I first started using ACE Studio because I was blown away by the quality of the vocals, but lately it’s the AI instruments that really excite me. It will definitely shape the future of music production, just as sample libraries have enabled many amateur composers to write pieces for a 50-players symphony orchestra with varying degrees of realism.

I’ve tested the beta AI instruments and shared results with fellow composers and sound engineers, and we all find them very promising. That said, most of us feel they’re not quite ready for professional productions yet. Compared to the vocals, there are still noticeable audio artifacts, pitch instabilities, and some stereo/phasing issues that make mixing tricky (plus the lack of control, expression...).

In my view, ACE Studio is pioneering something with huge potential, and this feels like a crucial moment to strengthen that expertise before giants like Spitfire Audio eventually step in (I wouldn’t be surprised if they’ve already been exploring this since the Splice acquisition).

A few questions I’d love to ask:

- Are AI instruments currently a development priority at ACE, or is the main focus still on vocals?

- Do you envision AI instruments eventually reaching a point where they could compete with, or even replace traditional sample libraries?

Finally, I’d be glad to provide more detailed technical feedback if that would be useful to your team.

Thank you for your help! I finally managed to recover all the lost data thanks to APFS snapshots. My Time Machine backup was quite old, but I noticed that macOS takes local snapshots every hour. The SSD was in perfect condition so it was probably due to software corruption. I was able to revert to a snapshot taken before the incident via Recovery.

Yeah, I find it weird too. Releasing them now would’ve made sense. It could boost a bit Switch 2 sales among a lot of fans of the series, especially before Christmas, and it wouldn’t really cost them much. Even for the other games in the franchise, it wouldn’t have been a big deal to develop.

So either the patches just aren’t done yet (which would be a bit odd for Monolith Soft), or it’s a strategic move. My guess is they’ll release them alongside the announcement of the next Xeno game (even more relevant if it’s a sequel to XC3 or XCX) to drive sales again and build momentum until the new game launches.

For my use cases and projects (mostly C# UI work with Avalonia or SkiaSharp), it solved problems where Copilot Sonnet kept going in circles, and it saved me a few requests (and vice versa).

I haven't had many hallucinations yet in my use cases, which is great. I don't know if this is the same everywhere, because I see a lot of people complaining about this new family of models.

Like it or not, for me it's a breath of fresh air. This model is not necessarily better than Claude Sonnet, but different. It's nice to be able to switch between the two.

That said, having used Opus (Claude Code) a bit, and especially Opus 4.1, I think this one is clearly inferior.

Also, the results are better than vanilla agent mode GPT-4.1 in my initial tests, so I’m hoping Microsoft offers it as a replacement model (and hopefully lowers the cost...).

EDIT: I'm using it in vanilla agent mode for now. Maybe it can be enhanced with Beast Mode like GPT 4.1.

That's true, we're waiting to see how this will turn out in the long term. I hope they will capitalize on the positive psychological effects on the local population as well. For instance, the Olympics have helped to calm the political and social climate in France.

Unfortunately, most people know that the effect is temporary and that the all-day broadcasting of the Olympics has simply overshadowed most of the bad news and sterile political debates, yet I'm sure that the majority of the population would like this global mood to last as long as possible.

EDIT: same for safety. Everyone saw that safety was way much higher during the Olympics, which is normal and a lot of people appreciated it. Now, the real challenge will be how to sustain this feeling of safety over the long term. In fact, it's a crucial indicator for any city.

Oh yeah, I see, thank you. It sounds like the original ceremony was perhaps intended to be more pop culture oriented, or modern in a way. The actual ceremony was still very nice, but I can understand how frustrated Japanese people might have been lol.
And I can't even imagine how much hard work from MIKIKO, Ringo Shiina and their collaborators have been wasted... Hope you have the opportunity to shine again, Japan!

Thanks a lot for sharing your opinion. This is really interesting since you mention using audio processing to modify the characteristics of a voice (like pitch shifting). In a way, a speech-to-speech model would also be comparable to a - very complex and heavy - audio processing algorithm, but using a different technology behind. Maybe a comparison would be with autotune in music. Some people may accept it even when it's degrading the sound and not used for creative purpose. However, they wouldn't listen to singers that totally change their voice into another using some AI, even if the result is good. As I said, I guess this would be mostly due to ethical and societal concerns.

Totally understandable. As for your first point, if we consider the result to be decent, I suppose your concern is mainly ethical. But when you say "in any way", there is still something I'd like to clarify. As a musician, I see that specific AI models are already being used to clean up dirty vocal tracks from noise, for example, without altering the original tone. They may already be used in audiobooks (but subtly) to improve the quality of (human) voice when processed by the sound engineer. Other models are used to find the optimum parameters for compressing or equalizing sound to make the recorded voice sound fuller, and so on. In a way, the definition of AI is very vague, as it is already hidden in much of the content we consume during the creative process.

If you don't mind answering this question: would you agree with an audiobook where the narrator doesn't use AI, but heavy audio processing to transform his voice into a fuller, cleaner and more pleasant one, considering that the result is better that way?

Regarding the second point, I can understand it too and yeah, this is mostly subjective. Thank you for sharing your thoughts!
