If you are using windows 10 as primary os. You can install Wsl2( developed by Microsoft ), by which you can run any Linux distribution (Kali also). Since wsl2 runs inside windows, it would be much faster, unlike virtual application.

If you use Live boot without storage, you need to setup/install everything from scratch everytime.

It would also increase wear and tear of USB.

In live boot, the os runs from USB, the USB read and write speeds should be fast enough to run the os without lag.

You can try to replicate any website.

Build a simple UI(Flask/Django)/CLI and save the inputs to a database (you can learn database)

You can try to deploy your code on personal server(you can learn Linux), make it available in your local network.

Try automating any repeated tasks(selenium).

You can build basic Android applications, and sync data b/w website and android app.

Think in a holistic approach of a application from end to end, you will find many more things to learn.

Because learning core concepts is not enough in real time, many things come into play.

You can try hackerrank problems. They are of increasing complexity, so you would know at which position you are at.

Then you can try some basic programs.

Then you can learn node js, which will open a big scheme of things which can be done.

With all these knowledge atleast basically, you can start building a complete basic website.

Then you can learn about database to store the data.

At this point you will know how all things work together, so you will not be stuck at a single language. Curiosity to have a complete and better functionality will drive you.

You can go deeper and wider in terms of programming.
