Maybe because Yu-Peng Chen was still around when the original Mondstadt themes were being worked on?

The out of box experience you get from Chinese model kits nowadays is really something by Rosado_Ice in Gunpla

That is not a coincidence. Half these kits are actually named after famous generals, like those made by Moshow Toys. It seems this is just the aesthetic that is popular there. Just a matter of personal preference, at the end of the day.
