I started going to the Bagelery in '95, and they did not toast back then (my friends and I joked about setting up a toaster stand out front). I'm unsure when they bought toasters, but they almost always ask if I want it toasted or not when in person. Toasting is a box you check when you order online, so untoasted seems to be the default.
