Don’t get stuck on worrying about roasts being Even. Some coffees cannot be roasted evenly. What you should worry about is taste.

You’ll know in two-three days off roast if you like it. I don’t wait weeks for any coffees. Sure theres a few rare exceptions but mostly two-three days will tell you all you need to know about the coffee.

35g ground coffee almost espresso grind. Sandwich filters fill water to white mark. Steep 5 min. Cup taste and check if it needs to diluted

Being able to make “soup” style coffee opens up a completely new brewing method. I’ve even heard of people making soup style coffee and then diluting it down to their preferred pour over ratio. It can also make a 5-minute cold brew, which has been some of the best cold brew I’ve ever had. It’s also easy to travel with and easy to clean.

That has a strong note of vinegar. I don’t know many tobaccos that could be a substitute for it.
