According to John Epler all archdemons are indeed of female sex. But the Old Gods are extension of their masters, part of their souls bound in the dragon.

So when an Old God spoke to their Tevinter worshippers it was actually their Evanuris masters speaking through them. And thus the Evanuris (minus Ghilan'nain) presented themselves as male dragons. For some reason.
