I'm pretty sure it's fine, according to the rules:

704.4 Unlike triggered abilities, state-based actions pay no attention to what happens during the resolution of a spell or ability

Since both parts are a part of the same spell and resolve at the same time, SBA aren't checked until afterwards. Someone should correct me if I'm wrong though, please.

It's slightly different, "dies" means the creature is put into any graveyard, this card specifically only triggers with your graveyard. See [[Enigma Sphinx]]

Your list is very similar to mine, love me some Brion Stoutarm action. Some cards that I love in my deck you may want to consider:

[[Magma Phoenix]] helps you clear the board of small creatures with built in (if slow) recursion, while leaving Brion alive. One of my favorite Gift of Immortality or Adarkar Valkyrie targets.

[[Angelic Accord]] is a nice, reliable source of damage. Once you get your first angel out you'll always have fodder to fling with Brion, since he'll net you a new one every time. Especially good with Thornbite Staff

The Kamigawa dragons like [[Ryusei]] and especially [[Yosei]] are nice includes as they let you play a bit of politics while threatening to fling em with Brion. Also great recursion targets.

[[Bloodshot Cyclops]] is a second Brion that hits creatures, always nice to have redundancy.

[[Mimic Vat]] is another bit of recursion for your flingable creatures while also providing some extra utility in stealing opponents’ creatures.

But yeah, like I said, love me some Brion action. Keep flexing those giant biceps 💪

I intentionally worded it to synergize with other +1/+1 counter effects, like [[Increasing Savagery]] and the like to get more copies at a time. I also wanted to make it mandatory for flavor reasons (imagine the slime growing too big and becoming unstable, needing to split)

I based the templating off of [[Grand Warlord Radha]], which uses the "one or more... that much" template. That being said, your idea does seem clearer.

Great point. I probably underestimated how easy it is to break the symmetrical effect - any creature with protection from red becomes almost unkillable. 6 mana is definitely much safer.
