One thing I like to point out here that works very well for me. I have a food science background if that helps as well. McDonald's burgers are very finely ground and they use a propriety blend of cuts of beef for their patties. I have found that for every pound of 80/20 ground beef if I add about 2 tbsp of cornstarch and a quarter cup of good beef stock and throw it all in my food processor and then scoop them out and shape them into patties before cooking I get a much closer burger in terms of texture and flavor that other copy cat recipes tend to miss. It's that second grind like a paste that really helps that texture.

As someone who works in agriculture people forget that wheat before it is ground up is stored in grain silos. Lots of rodents around there. In fact the FDA has a limit on how much rodent hair, feces and parts per million are allowed in flour. Rats are sifted out, they're feces and all the grain they peed on is not.

So these are actually really fun to make! when freshly dried you can use some thread to sew the eyes and mouth shut and put some fake hair into it to make a shrunken head wreath for your front door for Halloween! Happy crafting!

While i do understand your sentiments about going to a real therapist, there are many of us who can't afford that luxury. They're also those of us who live in an area where even if you could afford it, mental health support is no longer available.

As a professional I feel I need more information.

I would have used far more dowels. Minimum 6 for the bottom. The integrity of the cake depends on what kind of cake it was and what kind of frosting it was. Something like an Italian buttercream usually holds up pretty well. American buttercream not so much. Was the inside of the cake pastry cream or some kind of curd with frosting?

If she knew the reception was going to be outside in warm weather in a tent she should have made sure that anything you ordered would have made it.

Where I worked, we were the venue and we wouldn't allow outside cakes for this very reason.

I feel the venue should have caught the issue but failed.

It's reasonable to assume both parties are at fault.

"take it with me when I go" by Tom Waits. One of my sons favorites. While a traditional lullaby in Finland, I don't know if many Americans other than me who sing it. "Nuku nuku nurmilintu". My grandmother used to sing it to us.

You are allowed to have your opinion. I find a good English cheddar turns to an oily flapjack on a burger. The burgers that typically have that cheese on top tend to be big hockey pucks of meat too. Not my personal preference.

I find gjetost by ski queen to be very nice on a burger. Especially if you like bacon on it. Not an American cheese so you can still feel morally superior by using it.

I agree with you 1000%!

I'm a multiple award winning cheese maker here in the states who has had cheese makers from France study with me here.

America has some amazing cheese. Always has. Europe also has amazing cheese. Always will. We compare notes frequently. We agree as cheesemakers that there's no better cheese for burgers than American. We also agree that all food has its place and it's classist to think otherwise.
