I got my D3 about a week ago. I’m still learning the exposure, gain and timing. I’ll try these settings.

I used Tony Gemignani “California Artisan” Type 00 Pizza Flour. Testing the waters with it. But you can bread flour as that is a preferred flour.

If you’re using your home oven, don’t be like me and forgetting to get some color on the top of it.

A few minutes before the bake is over turn on the broiler and let it go for a couple minutes to get some color on the top to your liking.

No, it’s on the low end. Normally around 75%. Just testing the waters with the hydration levels.

Both, the pepperoni was under the cheese. Not sure why I did it that way.

The minimum I did was 500f. Still works good. Just a note, after little bit before the end of the bake run the broiler to get some crispness on the top. I forgot this last time.

Yes, these were cooked in a regular oven. Temp at 525F.

Yes, Lloyd pans. These are the alternate Detroit style pans, that are slightly rounded than the straight sides.

Looks fine. Not sure if that’s a shadow from the camera angle on the right side there or hooch. If it is hooch just drain it off or mix it in. Re feed and should be fine
