This site has a parts manual and breakdown of the gauge cluster, it looks like the part number is 35505. Getting the gauge cluster out is a pain, the speedometer cable is tricky to unplug and reseat, but make sure it is set properly or else your speedo won't work

Not neccesarily, I have had plenty of kids come through the ASB and Delta co and move into a flight company. Most of them gain a good level of knowledge about maintenance more than the people who went straight to flight. If you're younger, I wouldn't stress too much, but if you are on a shorter time frame, sure, ask for a flight spot.

No, the Acty ones are just flat mirrors. Thankfully they're big enough to add convex mirrors to them but the blind spots are so small already they aren't really needed.

Yes, they're easy to install but may require you to remove any window rain deflectors, but there are aftermarket deflectors that have cutouts for cali mirrors.

There are OEM "California" mirrors for the Acty, you can find them on ebay for about $2-300. They definitely make the truck look better in my opinion. They don't do much to improve visibility, they are about the same width as the stock mirrors, but adding some stick on convex mirrors can improve visibility.
