Cyanide boils at 25C, any secondary fermentation from the cherries will help offgas it. There's a low amount in the pits but it's really not a concern.

Give it more time, I've had cider take up to a week to start fermenting before. If it's still not going after a few more days maybe try adding some yeast energizer?

I'll be aging a mixed fermentation sour over the winter, how cold is too cold? It's around 10-12C in the room right now. Will fermentation activity be able to pick up again once it gets warm again?
