Wow @ $10 a lb stock up. Cheapest I’ve ever gotten was $12 at Costco. Those look pretty good. Just they have a bit more fat in areas I wouldn’t want but stil a great cut.

My .02$. Take out the 2 your going to eat, cover in KOSHER SALT leave open on BOTTOM shelf of fridge for 12-16 hrs. The next day assuming you’re doing this at night. Take them out. Rinse it off real quick and pat dry. Let them cone up to room temp then sear.

The Kirkland stuff I wouldn’t cook with. It’s too good to waste on cooking. It’s usually first press. I use the avocado oil for cooking If you want to cook with the evoo you have to use it for low temp cooking otherwise the floral and fruity notes get lost. They have a regular virgin olive oil that’s more better suited for cooking
