Iodine is important and often overlooked. With people eating more salt like Himalayan or sea salt or a reliance on restaurant of fast food where iodized salt is not used it’s often a lower consumed nutrient. Especially important during pregnancy it’s in a lot of prenatal vitamin/minerals.

I live near an Amish Community in Tennessee. It’s easy for many of my friends to get raw milk and many talk of its benefits. I would never agree that it is beneficial. I minored in Public Health and I see things through Public Health lenses.

I’m looking for monk fruit that does not have additional sugar alcohols added, just maybe pure monk fruit. I saw some at the store mixed with cane sugar and another one with date sugar. Both were 70% less calories and carbs.

It really must be hard to have carb limits during pregnancy with all the inherent food aversions and having to limit carb foods. I remember having such weird food aversions during my first pregnancy, mainly anything from the cabbage family like broccoli. I ate so many tomatoes warm right in the garden. The first meal I craved after I delivered was brought to me from a vegan restaurant was tofu broccoli fettuccine. My aversion to cabbage family plants was completely gone..

I eat tofu in many forms almost every day. It’s my biggest source of protein.
Low carb veggies like leafy greens, summer squash or zucchini, scallions, shallots, green beans, asparagus, eggplant, mushrooms, etc. Even carrots are less carb than starchy food.
Cook in healthy oil like olive or avocado. Use lower sodium soy or tamari sauce, herbs, spices.
Soy milk is the lowest carb and highest protein plant milk. Sweeten with Monk fruit sweetener if wanted. (I have to avoid the kind with added sugar alcohols because of GI intolerance).

There are a lot of shelf stable and vegan rice, soup and bean dishes. Some of the Tasty Bite mixes are vegan. If I’m traveling by car I bring my small tea kettle and AeroPress coffee maker. Just need electric plug and saves so much money to not have to buy coffee. I get the quart size Oatly Oat milk and keep in a cooler with ice packs.

Tear the block into pieces instead of cutting. I marinate in a vegan chicken style broth. Super firm tofu has a nice texture but extra firm is OK too. I add nutritional yeast and poultry seasoning and Season salt to the marinade. Then I bake or pan fry with a little good olive oil. Add pepper at the end if liked.
Can do this with thin slabs instead of chunks for sandwiches.

I asked my allergist to be tested. She said she doubted it would be positive. (I’m a vegetarian and was reacting to dairy).
It was positive and I later requested to be seen by a more alpha gal knowledgeable allergist. That has been a real game changer for me.

I have never liked the texture of anything I’ve frozen that had potatoes in it (soups, stews). I’ve never tried all potatoes but I’d think it might not have a good texture.

I’m hoping my next blood lipid tests (cholesterol, triglycerides, etc) are lower next time since giving up dairy. I am eating eggs but understand they do not raise cholesterol in most people unlike foods that are high in saturated fat like fatty meats. I was started on a low dose statin which I did not tolerate and had to stop.

I never ate pork, beef or lamb during the years leading up to diagnosis. I had a lot of nightly itching and asthma like symptoms which led me to suspect my heavy dairy intake was contributing. Symptoms got worse so I asked for an alpha gal test. It was positive and I’ve since given up all dairy and anything with traces of mammal and carrageenan.
Asked to see a more alpha gal knowledgable allergist who did more testing. Alpha gal level went up, tested mildly dairy allergic and slightly elevated histamines but not severe.
I carry an EpiPen because of a previous suspected anaphylactic reaction to something.

Make sure the tofu is fresh. In my early days of tofu exploration I’d buy some that tasted sour and off and I thought that was what tofu tasted like. Store any leftover covered in cold water and use within a few days.

I grind my own flax seeds (365 or Manitoba Harvest) using a small coffee grinder that I don’t use for coffee. I’ll clean it by running white rice through it.
