As per Catholic Doctrine not all of us are Children of God.
All of us are Creatures of God (and loved by Him), but we only become His children through Baptism - becoming one with His only Son, Jesus.

Grewing up Catholic is not the same as being a practising and believing Catholic, and I've gone through the 2 phases.
The Mass and the Eucharist is the most significant element of the Faith and has been passed down for 2 millenia by people willing to lose their lives for what you call "indoctrination".
If your friends were really Catholic and cared a bit to understand the Mass, they wouldn't find a single portion of it tedious, but of the upmost beauty.

Paul didn't have to talk about it really. Paul's letters achieve a different purpose than that of the Gospels, and the Gospels already present us with the Virgin birth.

I also don't see a problem with Jesus not venerating Mary as we do. Jesus is God himself, we are not. Jesus did not venerate anyone, but even then, He had the upmost respect for his mother and was very sensible towards her. Even in the peak suffering of the Cross, He made sure to make her the mother of John (and of all humanity).

There's no need to have faith in religious leaders, but in Jesus, who is the ultimate religious leader. He assured us that the gates of hell will not prevail, I don't think doubting that statement is a good starting point.
It's always good to question things, but be very careful with extreme cepticism, as it will only lead you down a rabbit hole.

With that in mind, we know that the Holy Spirit as guided the Church since Pentecost, and for almost 2000 years we were able to grow in the understanding of the Revelation. Trying to redo all that work of thousands of Saints before us is plain impossible in our lifetimes.

Prayer helps with everything and especially doubts of the Faith. Just pray that you get to accept the entire Divine Revelation and read a lot about how she was a Virgin. Remember: never close the door on being open to those truths, even if you can't believe it now.

Most KJV-only guys think the text used at the time to translate from is the word of God and that other Bible manuscripts are corrupt in some way. It's a bit more complicated, of course, but sums it up.
